Editor's Note
Welcome back to Savory Bites. Fresh intel for restaurant and hospitality operators who want to stay ahead of the tech reshaping our industry.
This week: Papa Johns launched drone delivery in Charlotte and is using AI ordering at the same time. The chains are stacking technology on technology while independents fall further behind.
Then: catering is quietly becoming one of the biggest growth engines in the restaurant industry. It's also the one channel where independents can absolutely win.
Let's get into it.

This Week In The Industry
Papa Johns Just Launched Drone Delivery. The AI Stack for Pizza Is Now Complete.
This week Papa Johns launched a drone delivery pilot in Charlotte with Wing, the Alphabet-owned drone delivery company. Three sandwiches are flying for now. Pizza is coming next as Wing figures out the aerodynamics of a flat pizza box at altitude.
Here's why this matters more than another delivery experiment. Two weeks ago Papa Johns launched Lou AI, their conversational ordering assistant. Same chain. Same quarter. Lou AI takes the order, Wing delivers it. Both connected through Google Cloud.
The technology stack for pizza ordering now looks like this. AI conversation handles the order. App or chat fulfills it. Drone delivers it. The customer talks to a bot, then watches a drone land in their yard. No phone call. No driver. No human in the entire transaction.
For independent restaurants, the response isn't to compete on drones. The response is to compete on the things drones can never replicate. A phone call answered on the first ring. A familiar voice. The order remembered from last time. The kitchen ticket fired instantly. The chains are building automated impersonal scale. Independents win by building automated personal service. Same technology, different goal.
The restaurants that figure that out are the ones still standing in five years.

📈 Inspire Brands Files for IPO The parent company of Arby's, Dunkin', Buffalo Wild Wings, Sonic, and Jimmy John's filed confidential documents for an IPO this week. The proceeds will go toward paying down debt. This is the second major restaurant IPO filing in three weeks. Jersey Mike's filed last month. The public markets are heating up for restaurant brands. 🍔 Burger King Sales Up 5.8%, Popeyes Down 6.5% Same parent company, opposite quarters. Burger King's "Reclaim the Flame" turnaround is showing real momentum after years of work. Popeyes is in its fifth straight quarter of declining same-store sales. The lesson: turnarounds take years, not quarters. Source: QSR Magazine
🤖 Square Launches Drive-Thru Platform Square unveiled an end-to-end drive-thru solution combining order capture, kitchen operations, and customer handoff in a single workflow. Built in partnership with The Howard Company and Nanonation. Another sign that the small operator tech stack is catching up to enterprise capability fast. Source: QSR Magazine
Tech Spotlight
Inside the Real Operator Tech Stack of 2026
This week's announcements paint a clear picture of where restaurant technology is heading. Papa Johns has drones plus AI ordering. Square has drive-thru. Toast has marketing automation. The tools that used to require enterprise budgets are now available to operators with 1 to 10 locations. The independents who build their tech stack thoughtfully over the next 18 months will be the ones who survive the next round of industry consolidation. The ones who wait for the chains to standardize and then catch up will be too late.
Ellie's Corner
Every week this space is dedicated to something we're building at Ellie Carte. An AI phone ordering and restaurant management platform built for independent restaurants and hospitality operators.
When Papa Johns customers order through Lou AI, they're talking to a chatbot inside an app. When your customers call your restaurant, they're talking to Ellie. A real conversational voice that knows your full menu, handles modifications, announces specials, and confirms the order back to them. Same AI category, completely different experience. The chains are building digital. We're building personal.
